For the past 20 years, classically trained chef Mike Tauraso of Frederick, Md., has owned The Tasting Room, a successful and popular high-end restaurant in downtown Frederick.
However, in his free time, he always enjoyed making barbecue, using different seasonings and sauces to fine-tune the recipes. “Making the perfect barbecue is one of the toughest things I have done, but I feel like I am getting close to perfecting it,” he said.
In 2008, a building went on the market in downtown Frederick that he thought would be perfect for a barbecue restaurant, so he decided to launch Black Hog BBQ.
Now, 13 years later, Tauraso, his wife Lori, and restaurant general manger Josh Eyler are opening their fifth Black Hog location at Riverside Commons Plaza on Riverside Parkway in Ashburn near the Texas Roadhouse restaurant. It will be the first Black Hog restaurant outside of Maryland.
“I narrowed in on the space last year. It looked like a great area to do the next location,” Tauraso said. “It is not far from Frederick, and Loudoun is a growing area. Everyone has been very easy to work with.”

With the new location, Tauraso made the decision to sell The Tasting Room in 2020 and is focused now on making barbecue.
Popular menu items include a variety of smoked meats, such as pork shoulder, brisket, chicken and ribs. “We do a great brisket. We smoke it overnight. And our ribs are fantastic, finished two ways,” he said.
Other in-demand items on the menu are the smoked turkey, homemade gumbo, pulled pork and the freshly prepared side dishes such as southern greens, mac and cheese, cole slaw and potato salad.
Besides barbecue, additional menu items include burgers, wings, Texas chili, salads and several meal option for kids.
The restaurant is fast-casual style service with the option for takeout and curbside pickup as well as seating for up to 66 inside once pandemic restrictions are lifted. There is also outdoor patio seating to enjoy in the warmer months.“Everything is made fresh daily and we prepare food the right way. We are excited to be here in Loudoun,” he said.
