Bites, a new grilled cheese bar created by the owner of the popular Leesburg restaurant Senor Ramon Taqueria, is set to open Friday at 105 South King Street in Leesburg.
After several months of renovations to the space, which was previously an antique store, owner Damian Dajcz said "we are ready to go."
Known as one of the ultimate comfort foods, there will be 12 different gourmet grilled cheese sandwiches on the menu. One of Dajcz's favorites includes gruyere and sharp chedder cheese, smoked turkey and cranberry jam on brioche bread. Another favorite is smoked mozzarella, applewood smoked bacon and apple butter on sourdough bread. He also enjoys one with muenster and gruyere cheese, balsamic arugula, diced tomatoes and truffle butter on marble rye bread.
In addition to grilled cheese sandwiches, there will be several salads, two types of soup and six to eight different types of cheese that can be made into customized cheese plates.
There is a large covered porch with seating for about 25 people. Inside, there will be seating for about 35-40 people.
Another highlight at Bites is the beverage program which includes six types of sangria -- three white and three red. There will also be two wines on tap, six beers on draft, two ciders and six different wines by the bottle.
Bar Manager Katie Kavinsky said she will provide "something for everyone at the bar."
Kavinsky's freshly made sangrias include a traditional red sangria, blood orange and wild berry. The three white sangria flavors are lychee fruit, white peach and tropicale, which is made with pinot grigio, sour mix, triple sec, and soda water, topped with pineapple, oranges and limes.
Hours will be Tuesday and Wednesday, 11 a.m.-9 p.m.; Thursday through Saturday 11 a.m.-11 p.m.; and Sunday 11 a.m.-9 p.m. The eatery will be closed on Monday.
